Now that we’re (mostly!) settled in our new house, it’s time to start menu planning again, so here’s my April 2014 Monthly Menu Plan. If you look closely at my menu planning board, you’ll notice that it got a little banged up in the move, but it still works just fine. I kind of like it on our new refrigerator. (The doors on the fridge curve in such a way that my image appears tall and thin with really long legs. I could stand in front of that thing all day!) 🙂

Week 1 – It’s a little cool and rainy here, so chicken & wild rice soup made the list. We ate it tonight with some pretzel rolls, which I tried for the first time. They were mmmmm-mmmmm good! I’ll have to take a picture and post about baking them soon, but until then, you can find a great recipe here. Last weekend, we finally moved our grill to the new home, too. We’ll have to see if it warms up and dries up enough to make the London broil, one of my favorite grilling recipes!

Easy beef stroganoff

Week 2 – A few weeks ago, I headed back to our old stomping grounds to pick up some freezer beef that we had purchased from some friends. So glad to make sloppy joes and easy beef stroganoff with a healthier source of beef. I’m thinking of trying a new pork chop crock-pot recipe, too. I’ll keep you posted on the outcome. And I’m thrilled to be able to roast a whole chicken again, now that I have access to all my pots and pans that were in storage!

Week 3 – Not much new or exciting on the menu plan this week, other than the fact that it’s great to make so many home-cooked meals again. Tater-tot casserole, tacos, jambalaya, spaghetti and meatballs, and hamburgers on the grill…lots of family favorites.

Week 4 – So thrilled for Easter! I love to celebrate Resurrection Sunday with family. We’ll be baking a ham with deviled eggs on the side. Leftover ham will go straight to the soup pot for creamy ham soup, probably with those pretzel rolls again. They’re so addicting! Then it’s time for fried fish, kung pao chicken, roasted chicken (again!), calzones, and biscuits and gravy.

Week 5 – We’ll round out the month with a crock-pot favorite: creamy crock-pot chicken alfredo served over rotini noodles, followed by tacos (easy meal during our six weeks of gymnastics classes), lasagna, and a chicken & noodle casserole.
